A team in the United Kingdom has developed Crustyastum, an innovative device for the painless execution of crustaceans, to answer public concerns about animal slaughter.
This development work was carried out by the Department of Food and Animal Sciences at the University of Bristol in collaboration with the Silso Food Research Institute, and part of the funding was provided by the Painless Slaughter Association and the Animal Welfare Fund.
The Crustastum device uses a low voltage current to stun the crustacean. It is said that it does not affect the appearance, flavor, or texture of the meat, nor does it cause crab clawing off.
Every year, 54 800 tons of lobster are killed in Britain. Crustastum's team believes that the methods used today are both slow and adverse reactions and show extreme pain. Common methods of killing live lobsters are direct cooking, freezing, immersion in fresh water, or severing of nerves.
Other "painless" methods that the group has studied include anesthesia and carbon monoxide anesthesia. However, these methods have some disadvantages: the difficulty of administering the anesthetic and the problem of adding harmful substances to the food. The use of carbon monoxide is convenient, but it takes a long time to achieve results, and lobsters exhibit extremely strong adverse reactions.
In these trials, electroshock seems to be the only viable option. Applying current causes the animal to lose consciousness and then execute it in other ways.
The current Crustastum prototype is a single stun device with an amperage of 3.5 amps and above to stun or kill lobsters. Because some lobsters are "struck" stronger than others, intermittent stuns require differential currents.
